Who doesn’t love a good crock-pot meal? Weather you work in or outside of the home we all get a little busy and don’t always have time to prepare a healthy dinner for the family.
This lemon garlic chicken recipe is an easy, no fuss way to have dinner prepared with minimal work. It goes great with a side salad or fresh veggies. You can also shred it over your favorite pasta or a bed of fresh spinach leaves for a light lunch.
If you are a THM mama then you can use this protein in any fuel setting. When I served it to my boys the oldest said “Mom! Can you make this every night for dinner? This is good!” Don’t take my word for it. Try it. Here is what you need.
Ingredients:
3-4 boneless skinless chicken breast
3-4 cloves of garlic
1/2 sweet onion
1 lemon
1 C water
1 tbs chicken bouillon powder
2 tsp lemon pepper
Instructions:
Place rinsed and dried chicken breast into crock-pot. Add garlic, onion water, juice from lemon (squeeze the entire lemon), bouillon powder, 1 tsp of lemon pepper into your food processor. Mix on medium high until all veggies have been pureed and you have a smooth liquid texture. (Taste mix, you may want to add salt pepper or more lemon pepper; it’s up to you) sprinkle the last tsp of of lemon pepper onto the chicken in the crock-pot. Then pour the puréed mixture over the chicken. Place lid on crock-pot and cook for 6 hours on low. Check chicken to confirm that it has been thoroughly cooked.
